Blueberry and Lemon Compote Recipe

I made this recipe to put on top of dessert pancakes and it turned out very nicely.

  • 1/4 cup fresh blueberries
  • 1/2 cup lemon juice
  • 1/4 cup sugar
If you would like to minimize the tart lemon flavor, substitute half of the amount of lemon juice for the same amount of water.

  1. In a saucepan over low heat, add sugar and lemon juice.  Stir until the sugar is dissolved and the mixture is thick and syrupy.
  2. Add the blueberries and stir for three minutes or until the blueberries are soft.
  3. Put the lid on the pan and let the compote simmer for 1-2 minutes.
  4. Serve and eat while the compote is fresh.
