Ingredients:
- 1/4 cup fresh blueberries
- 1/2 cup lemon juice
- 1/4 cup sugar
If you would like to minimize the tart lemon flavor, substitute half of the amount of lemon juice for the same amount of water.
Directions:
- In a saucepan over low heat, add sugar and lemon juice. Stir until the sugar is dissolved and the mixture is thick and syrupy.
- Add the blueberries and stir for three minutes or until the blueberries are soft.
- Put the lid on the pan and let the compote simmer for 1-2 minutes.
- Serve and eat while the compote is fresh.
